What’s better than Carrot cake?

Carrot cake oatmeal! Whenever I have work, I always ensure to make a hearty, special bowl of oats for breakfast. Just plain chocolate flavoured oatmeal is great, but they’re my school breakfast! I was struggling for idea, when I though of this – and it was so tasty! So this is my Vegan Mofo entry #3:

carrot cake oatsI’ve never put nuts in oatmeal before (le gasp!), but I loved how they add to the flavour and texture, I might just try it again in the near future. If you like carrot cake, and you like oats, try it! It’s quite simple, all you need is:

  • 1 small-medium carrot
  • 40g oats
  • 1/2 teaspoon vanilla essence
  • 1 cup of soy milk (or other milk)
  • 4 pecan halves, roughly chopped
  • 2-3 pinches chopped walnuts
  • 2 teaspoons light brown sugar
  • 1/3 teaspoon cinnamon or mixed (pumpkin) spice
  • agave, to serve

In a pan, add the oats cinnamon and soymilk, then grate in the carrot (I did it so that the round end was on the grater, to get smaller grates). Bring to the boil on the hob, then turn to a low simmer. At this point, add the brown sugar. Stir in and keep stirring untill the sesired consostancy. When cooked, add in the vannilla and half the chopped nuts. Transfer to a bowl, then drizzle on agave and add the rest of the nuts on top.

Yum!

I’m glad I didn’t start work untill 10 this morning though, as I had a rough night last night! I drunk a little bit too much, but not so much that I was puking or anything like that. I had a good time though, so that’s all that matters! The party had a theme of hats, so i decided to wear my ‘neko’ hat.

Oh Oats Why Did You Let Me Down?

Yesterday I bought a big 1kg bag of Jumbo oats. I had heard a lot about these on livestrong. Tastier, chewier, bigger, more nutritious than you humble rolled oat, so I have heard. So I was eagerly awaiting my favourite meal of the day -breakfast- to try out these ‘amazing’ things.

SN850851 I added 40g oats, and 300ml soy milk. Microwaved it for a while, longer than the pack said. They just didn’t take to the milk, they were basically cooked oats in very hot soymilk. When I was nearly finished eating though, they took the soymilk up more. But I found them to be a lot more bland than their rolled counter part. Maybe I added too much milk, I’ll give them another chance next weekend, but this time I’ll cook them in a saucepan. If they don’t work out….What on earth do you do with 960g of unwanted oats?

I have a new favourite meal at the moment.  It’s quick, tasty and filling:

SN850850Broccoli, soyamince made up with half a kallo low salt stock cube, and tomato oats. (Or in this case, barley flakes)

The tomato oats are what makes this dish, and are so yummy. My recipe makes enough for one very large portion, unless you split it into two small ones, but my stomach is endless so it’s no problemo.

You Need for one large serving:

  • 30g rolled oats (I think it works best with these as you get a thicker result, but you can use other grains, like barley, rye ect)
  • 1/3 tin of chopped tomatoes
  • A tablespoon squeeze of tomatoe puree (paste)
  • 1 small onion or half a large one
  • garlic to taste
  • spices to taste
  • You can also add optional things like mushrooms, peppers ect.

In a small saucepan, fry the onion and garlic (I use fry-lite for this), then add the chopped tomatoes and tomato puree. At this point, I usually empty the left of the tinned tomatoes in a bowl and 1/5 fill the tin with water, swish it around and add it to the pan.

Bring to the boil, stirring, then turn down to a simmer. Add extra vegetables at this point. If the mixture becomes too thick, add some water and wait untill it’s at the desired consistancy. I have to do this a lot while I wait for other bits to finish cooking. After about 10 minutes, it’s done! But it can be left simmering for as long as the rest of the meal takes to cook.

Remember to stir often when it’s simmering, if you have pans like mine, it burns if you aren’t by it’s side every 2 minutes :S
